Vegan Spiced Apple Muffins

Serves 12

  • 220g plain flour

  • 2 1/2 tsp baking powder

  • 1/4 tsp salt

  • 100g caster sugar

  • 75 ml vegetable oil

  • 240ml plant milk (we like oat milk)

  • 4 drops Cinnamon Spice Drops

  • 2 drops Chai Spice Drops

  • 5-7 chopped dates

  • 150-200g diced apples

  • 75g chopped pecans or walnuts (optional)



Method of Preparation:



  1. Preheat the oven to 180°C.

  2. Line 12 muffin tins with paper or silicone liners.

  3. Mix the flour, baking powder, salt, and sugar together in a large bowl.

  4. Mix the oil, milk and Spice Drops in another bowl.

  5. Add the wet ingredients slowly into the dry and mix until combined but don’t overmix.

  6. Fold in the apples, dates and nuts.

  7. Fill each muffin lined to about 2/3 full.

  8. Bake for 30-35 minutes.

  9. Cool and enjoy with a nice cup of chai tea.
