Carrot and cumin soup with ginger

This is a moreish soup which beautifully combines the flavour of cumin and carrot with the sharpness of ginger.

Serves 2

  1. Heat the butter or oil and gently cook the onion until translucent.

  2. Add the carrots and sauté for 2 minutes, stirring.

  3. Add the stock and cook for 25 minutes until the carrots are tender.

  4. Blend the soup into a smooth texture.

  5. Infuse the yogurt with theCumin Seed Spice Drops®   and Ginger Spice Drops®.

  6. Pour the soup into 2 bowls and stir in the flavoured yogurt.

  7. Garnish with the coriander and croutons.
