Mulling Spices for Large Batches: How to Make Mulled Drinks at Scale
How Christmas markets, caterers, pubs and drinks producers use Mulling Spices Spice Drops to make large batches of mulled wine, cider and juice, with dosing for 1 to 100 litres.
In short: To add cinnamon to coffee without powder or syrup, put 1 to 2 drops of Cinnamon Spice Drops in the cup and pour the coffee on top. There is no clumping, no grit and no waiting for a stick to infuse. Two drops give roughly the flavour of 1/8 teaspoon of ground cinnamon, and Cinnamon won two stars at the Great Taste Awards 2015.
Ground cinnamon floats and clumps, sticks take time to infuse, and syrups add sugar. A liquid extract mixes straight in and is easy to measure.
| Drink | Cinnamon Spice Drops |
|---|---|
| Latte or flat white | 1 to 2 drops |
| Hot chocolate | 1 to 2 drops |
| Iced coffee for 4 | 2 to 3 drops |
Serves 4. Dissolve 6 tsp strong coffee powder in 100ml hot water and let it cool. Blend the coffee with 500ml milk, 8 scoops of vanilla ice cream and 2 to 3 drops of Cinnamon Spice Drops until smooth, then pour over ice.
Spice Drops contain no artificial colours, flavours or preservatives and are oxalate free. They are vegan, gluten free and alcohol free, and contain a plant derived emulsifier, polysorbate 80, which helps them mix into food and drink.
Spice Drops are made at our own factory in Kerala, India, by a family business that dates back to 1946. The spices are crushed in a hammer mill or under a roller without heat, then extracted, and the solvent is removed under vacuum. For some flavours the distilled oil of the same spice is added back. The result is real spice flavour: the natural compounds that give each spice its taste and aroma are still there, such as piperine, which gives black pepper its heat.
