Cooked Chilli Salsa

This is a rich, tomato-red chilli salsa. It is sweet and tangy, delicious with anything barbecued or use with nachos or with a burrito.

  1. Heat the oil on medium heat and add the onion and cook until soft.
  2. Tip in the tomatoes and sugar and cook on medium heat for 5 minutes. Stir occasionally until the mixture is thickened.
  3. Add in all the Spice Drops®, lemon juice and salt and stir until evenly mixed.
  4.  Turn off the heat and leave to cool.
  5.  Serve garnished with the lemon rinds.
